It’s Cultural Diversity Week in Victoria. This week-long celebration coincides with the United Nations ‘Day for the Elimination of Racial Discrimination’ and The Department Of Social Services ‘Harmony Day’ on 21 March.
Every year we have a lunch at work, we have a rich and diverse community. We all bring along something to share from our country of origin.
This year, I share my mother’s recipe for Weet-Bix cake, a childhood favourite.
Did a video too:
Here’s the details!
Ingredients:
4 weet-bix
1 cup sugar
2 tablespoons cocoa
1 cup coconut (desiccated is probably best)
1½ cups self-raising flour
¼ cup margarine (melted)
and 1 cup of milk.
Crush weet-bix finely, add sugar, cocoa, flour (and coconut), melted margarine and milk
Mix well and press into shallow tin.
Bake 10-12 minutes. Ice when cold. 180º
Gregory, I’ve sent an urgent email to jamie Oliver, Heston Blumenthal and Gordon Ramsey to watch out, there is someone on their case who is going to eclipse them in the ratings!
You are an absolute natural in front of a camera and also very confident in the kitchen. You’ve come up with a previously unheard of creation that sounds just wonderful. Before you patent it I’m going to pinch that recipe but I might give the ‘red’ icing a miss.
PS Oh I forgot to mention the picture on the left hand side of the window – the good cooking fairy just keeping an eye on things ?? All kitchens should have one.
Thanks Naomi – Hobby Tex Jesus is always watching out. It’s quick and easy to do, which I think was the appeal for my Mum – so many mouths to feed!
Hi Greg, it was great to see you again! I’m going to give this a try with my 10yr old daughter. She likes all the ingredients, and if I add choc chips, the weet bix cake will have all major food groups!
Whoops. Just read your typed recipie. Maybe you should add “cup” to the marg measurement?
Thanks! Updated!
